Introducing Cape Byron 'Serendipity' Single Malt Whisky
At Cape Byron Distillery, we believe that some of life’s best moments come from unexpected surprises—our new 'Serendipity' Single Malt Whisky is a perfect example of this. Crafted from Heavily Peated Scottish barley that serendipitously made its way to our distillery in Byron Bay, this whisky is a true testament to the magic that can happen when you least expect it.
Our journey began with a collaboration with our friends at Stone & Wood, who created a superb wort using Simpsons Heavily Peated malt, a key ingredient in many of Scotland’s legendary whiskies. But as we began the fermentation and distillation process, something remarkable unfolded. The whisky revealed an array of incredible flavours—custard apple, orchard fruits, lemon, and lime—all enveloped in a soft, delicate smoke. It was a delightful surprise that exceeded all our expectations.
Matured in 200-litre ex-bourbon casks from Heaven Hill and Buffalo Trace, Serendipity developed a richness and depth that is simply outstanding. Bottled at 46% ABV, it offers a complex and harmonious flavour profile. Expect to find notes of charred white peach, roasted nuts, and honey, all leading to a beautifully lingering smoky finish. It’s a whisky that’s not just good—it’s exceptional, with every sip revealing layers of flavour that showcase the care and craftsmanship behind its creation.
