    (3L cloudy apple, 3x cinnamon quills, 1.5L water, whole orange peel, 8g fresh ginger, 1whole nutmeg, 5x cloves, 5x cardamon pods) 
    For one serve: a pinch of cinnamon, a zest of orange, small chunk of ginger, nutmeg, one clove, one cardamon pod, 
  • Hot Toddy
    60ml Brookie's slow gin
    30ml lemon juice
    30ml ginger/honey syrup
    30ml hot water
    spray of Smoky whisky (Serendipity Whisky)
  • Hot Buttered Whisky
    45ml Cape Byron The Original Whisky
    Round bar-spoon of Butter Batch
    topped with hot water
  • Butter Batch
    250g unsalted butter
    1 cup dark brown sugar
    1/4 cup agave 
    1tsp clove
    1tsp cinnamon
    1tsp allspice
    1tsp nutmeg
    Pinch of salt 
    Melt the butter, mix in all ingredients and stir 
    If you want to shape, place butter in plastic wrap to shape and put in the fridge. 
    Store in the fridge for up to 3 months.
